Recipe - Sopa de
Gamba (Shrimp Soup)
Sopa de Gamba is a simple, tasty and
healthy dish evoking thoughts of villages along the Catalan coast.
It is quick and simple to prepare but looks good and tastes delicious!
Ingredients (for four portions):
3 tablespoons of olive oil
3 cloves garlic, crushed
1/2 cup small stuffed
green olives, de-stoned & rinsed
1/2 kilogram fresh
spinach, trimmed and coarsely chopped
3 cups chicken stock
1 cup coarsely chopped fresh basil
4 medium tomatoes, seeded and coarsely chopped
salt to taste
freshly ground pepper
16 jumbo shrimp, shelled and de-veined
2 tablespoons chopped parsley for garnish
Directions:
In a large casserole, heat oil and saute the garlic, olives &
spinach until spinach begins to wilt.
Add the stock, basil, tomatoes.
Add salt & pepper to taste.
Mix well and bring to a boil.
Add the shrimp sand cook uncovered until the shrimps are cooked.
Serve in individual soup bowls, garnished with chopped parsley |
